Ingredients
For the Puff Pastry:
- 2 sheets of puff pastry (store-bought or homemade)
- A little powdered sugar for dusting
For the Vanilla Custard Filling:
- 2 cups (500 ml) whole milk
- 1 cup (250 ml) heavy cream
- ¾ cup (150 g) granulated sugar
- 4 tablespoons cornstarch
- 4 egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons pure vanilla extract (or 1 vanilla bean, seeds scraped)
- A pinch of salt
For the Vanilla Glaze (optional):
- 1 cup (120 g) powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
Step-by-Step Method
Step 1: Preparing the Puff Pastry
- Preheat the oven to 400°F (200°C).
- Line two baking trays with parchment paper. Place a sheet of puff pastry on each tray.
- To prevent puffing, prick the pastry all over with a fork. Place another sheet of parchment on top, and then a second tray to keep the pastry flat during baking.
- Bake for 15–20 minutes, or until golden and crisp.
- Remove the top tray and parchment, then bake for another 3–5 minutes if needed to deepen the color.
- Allow the sheets to cool completely, then carefully trim them into equal rectangles or squares to fit your serving dish or pan.
