Ingredients

For the Puff Pastry:

  • 2 sheets of puff pastry (store-bought or homemade)
  • A little powdered sugar for dusting

For the Vanilla Custard Filling:

  • 2 cups (500 ml) whole milk
  • 1 cup (250 ml) heavy cream
  • ¾ cup (150 g) granulated sugar
  • 4 tablespoons cornstarch
  • 4 egg yolks
  • 2 tablespoons unsalted butter
  • 2 teaspoons pure vanilla extract (or 1 vanilla bean, seeds scraped)
  • A pinch of salt

For the Vanilla Glaze (optional):

  • 1 cup (120 g) powdered sugar
  • 1–2 tablespoons milk
  • ½ teaspoon vanilla extract

Step-by-Step Method

Step 1: Preparing the Puff Pastry

  1. Preheat the oven to 400°F (200°C).
  2. Line two baking trays with parchment paper. Place a sheet of puff pastry on each tray.
  3. To prevent puffing, prick the pastry all over with a fork. Place another sheet of parchment on top, and then a second tray to keep the pastry flat during baking.
  4. Bake for 15–20 minutes, or until golden and crisp.
  5. Remove the top tray and parchment, then bake for another 3–5 minutes if needed to deepen the color.
  6. Allow the sheets to cool completely, then carefully trim them into equal rectangles or squares to fit your serving dish or pan.
