Crinkle Cake: A Delightfully Crispy, Custardy Dessert
Crinkle Cake is a visually stunning and irresistibly delicious dessert that combines the crispiness of layered pastry with the richness of a creamy custard. Its signature “crinkled” texture gives it a beautiful, golden appearance and a unique bite—crispy on the outside, soft and silky on the inside. Despite its elegant look, this cake is surprisingly simple to prepare, making it perfect for both beginners and experienced bakers.
What Makes Crinkle Cake Special?
Crinkle Cake is typically made using thin sheets of phyllo dough that are scrunched (or “crinkled”) and layered into a baking dish. These delicate layers are baked until golden, then soaked in a sweet custard mixture and baked again to achieve a perfect balance of crunch and creaminess. A final drizzle of syrup adds sweetness and shine.
Ingredients You’ll Need
For the Base:
- 1 package of phyllo dough (thawed)
- 150g melted butter
For the Custard:
- 2 cups milk
- 3 large eggs
- ¾ cup sugar
- 1 teaspoon vanilla extract
For the Syrup:
- 1 cup sugar
- 1 cup water
- 1 teaspoon lemon juice
- Optional: orange blossom water or rose water for aroma
Step-by-Step Method
Step 1: Prepare the Phyllo Dough
Start by preheating your oven to 180°C (350°F). Take one sheet of phyllo dough and gently scrunch it lengthwise like an accordion. Place it into a greased baking dish. Repeat this process with the remaining sheets, placing them tightly next to each other until the dish is full.
Tip: Work quickly and keep unused phyllo covered with a damp cloth to prevent drying out.
Step 2: First Bake
Brush the top of the crinkled phyllo generously with melted butter, making sure to coat all the folds. Place the dish in the oven and bake for about 20–25 minutes, or until the top becomes golden and crispy.
Step 3: Prepare the Custard
While the pastry is baking, whisk together the milk, eggs, sugar, and vanilla extract in a bowl until smooth and well combined.
