  • 1 tablespoon chopped parsley, optional

Step 1: Prepare the Phyllo Dough

Phyllo dough is delicate, so remove it from the freezer and thaw it according to the package instructions. It should be fully thawed before using, but still cool.

Once opened, cover the phyllo sheets with a clean slightly damp towel. This keeps them from drying out while you work.

Do not leave phyllo uncovered for too long because it can crack and become difficult to fold.

Step 2: Prepare the Baking Dish

Preheat the oven to 350°F / 175°C.

Grease a medium baking dish with butter or oil. A 9×13 inch dish works well for a family-size pie. You can also use a round baking dish if you want a more traditional pie shape.

Brush the bottom and sides of the dish with melted butter. This helps the phyllo become golden and prevents sticking.

Step 3: Mix the Cheese Filling

In a bowl, combine the crumbled feta, mozzarella, ricotta or cottage cheese, and cheddar if using.

Mix gently with a fork.

Feta gives the pie a salty, tangy flavor. Mozzarella adds softness and stretch. Ricotta or cottage cheese makes the filling creamy. Cheddar adds a stronger cheese flavor, but it is optional.

If your feta is very salty, use less added salt later.
