Crispy Golden Garlic Chive Fried Potato Sticks with Chili Dips

There is something irresistible about freshly fried potatoes when they are golden on the outside, tender in the middle, and seasoned with just the right amount of garlic and herbs. These Crispy Golden Garlic Chive Fried Potato Sticks take that familiar comfort-food favorite and give it an extra layer of flavor with fragrant garlic, fresh chives, and a choice of bold chili dips.

The potato sticks are cut into thin, even pieces so they develop plenty of crisp edges while staying fluffy inside. A short soaking step helps remove excess surface starch, while drying the potatoes thoroughly before frying is the key to achieving a better crunch. Once fried, they are tossed with garlic and chives while still warm, allowing the aromas to cling beautifully to every piece.

Serve them as a snack, appetizer, or side dish alongside spicy chili dipping sauces. They are especially delicious straight from the pan when the potatoes are at their crispiest.

Ingredients

For the Potato Sticks

  • 4 medium russet potatoes
  • 2 tablespoons cornstarch
  • 3 cloves garlic, finely minced
  • 3 tablespoons fresh chives, finely chopped
  • 1 teaspoon salt, plus more for seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Neutral frying oil, as needed

For the Quick Chili Dip

  • 3 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar or lime juice
  • ½ teaspoon sesame oil
  • 1 small garlic clove, finely grated
  • ½ teaspoon chili flakes, optional

For a Creamy Spicy Dip

  • ¼ cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 teaspoon lime juice
  • ½ teaspoon chili flakes or chili sauce
  • 1 small garlic clove, finely grated

Step 1: Prepare the Potatoes

Start by washing and peeling the potatoes. You can leave the skins on if you prefer a more rustic texture, but peeled potatoes give the finished sticks a cleaner, more uniform appearance.

Cut each potato into sticks approximately ¼ inch thick. Try to keep the pieces as similar in size as possible. Even cuts are important because thinner pieces will cook faster than thicker ones.

Place the cut potatoes in a large bowl of cold water and let them soak for about 20–30 minutes.

This removes some of the excess surface starch and helps prevent the potato pieces from sticking together during frying.

Step 2: Dry Them Thoroughly

Drain the potatoes and rinse them once with fresh cold water. Spread them over a clean kitchen towel or several layers of paper towel.

Pat them very dry.

This step is easy to overlook, but it makes a noticeable difference. Excess water can cause the oil to splatter and can interfere with the potatoes developing a crisp surface.

Let them air-dry for a few minutes if necessary.

Step 3: Add a Light Coating

Transfer the dry potato sticks to a clean bowl.

Sprinkle them with the cornstarch, salt, black pepper, and paprika. Toss gently until the potatoes have a very light, even coating.

The goal is not to cover them with a thick layer of starch. A thin coating is enough to encourage a crisp, delicate exterior without making the potatoes feel heavy.

Step 4: Prepare the Garlic and Chives

While the potatoes are resting, finely mince the garlic and chop the fresh chives.

Keep them separate for now.

The garlic will be added carefully toward the end of cooking so that it becomes fragrant without burning. The chives are best added after frying, when their fresh flavor can remain noticeable.
