Crispy Parmesan-Crusted Roasted Potatoes: A Golden, Cheesy Step-by-Step Recipe

Crispy Parmesan-Crusted Roasted Potatoes are the perfect side dish when you want something simple, comforting, and full of flavor. These potatoes are roasted until the inside becomes soft and fluffy while the outside turns golden, crunchy, buttery, and coated with a savory parmesan crust.

This recipe is easy to prepare, but the final result tastes like something from a restaurant. The parmesan cheese melts and browns at the bottom of the pan, forming a crispy cheesy layer that sticks beautifully to each potato. Garlic, herbs, butter, and olive oil add extra richness, making every bite flavorful and satisfying.

These potatoes are perfect with roasted chicken, steak, grilled fish, burgers, eggs, or even served alone with a dipping sauce.

Why You Will Love This Recipe

Crispy Parmesan-Crusted Roasted Potatoes are special because they combine three amazing textures in one dish. The bottom becomes deeply golden and cheesy, the edges turn crisp, and the middle stays tender and creamy.

Unlike plain roasted potatoes, this version has a flavorful parmesan crust that adds saltiness, crunch, and a slightly nutty taste. It is also easy to customize with different herbs and spices.

Ingredients

Main Ingredients

  • 2 pounds baby potatoes or small Yukon gold potatoes
  • ½ cup grated parmesan cheese
  • 3 tablespoons melted butter
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ¾ teaspoon salt, or to taste
  • 1 tablespoon chopped fresh parsley, for garnish

Optional Ingredients

  • ¼ teaspoon chili flakes for heat
  • ½ teaspoon dried rosemary or thyme
  • 1 tablespoon lemon juice for serving
  • Extra parmesan for topping

Step 1: Choose the Right Potatoes

For the best result, use baby potatoes, Yukon gold potatoes, or small red potatoes. These types roast well and become creamy inside.

Baby potatoes are especially good because they are naturally small, tender, and easy to cut in half. Their flat cut side also helps create a crispy parmesan crust.

Wash the potatoes well under running water to remove any dirt. Since the skin stays on, make sure they are clean.

Step 2: Cut the Potatoes

Cut each potato in half lengthwise.

If some potatoes are larger, cut them into quarters so all the pieces are similar in size. Even pieces cook at the same speed and brown more evenly.

Place the cut potatoes in a large bowl.

Step 3: Dry the Potatoes Well

After washing and cutting, pat the potatoes dry with a clean kitchen towel or paper towels.

This step is very important. If the potatoes are wet, they will steam instead of roast, and the parmesan crust will not become crispy.

Dry potatoes roast better and develop a stronger golden color.

Step 4: Prepare the Parmesan Crust Mixture

In a small bowl, combine the grated parmesan cheese, garlic powder, onion powder, Italian seasoning, paprika, black pepper, and salt.

Mix everything together well.

Use finely grated parmesan instead of large shredded parmesan. Finely grated parmesan spreads evenly and forms a better crust on the bottom of the pan.
