Crispy Pork Belly Bites: A Step-by-Step Recipe for Juicy, Caramelized Perfection

Ingredients

For the Pork Belly

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder (optional)
  • 1 tablespoon olive oil

For the Marinade

  • 3 tablespoons soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon chili sauce or sriracha (optional)

For Garnishing

  • Green onions, sliced
  • Sesame seeds
  • Fresh cilantro
  • Extra chili flakes (optional)

Step 1: Prepare the Pork Belly

Start by cutting the pork belly into evenly sized cubes.

Try to keep the pieces around the same size so they cook evenly. If some pieces are much smaller, they may dry out while larger pieces are still cooking.

Pat the pork belly cubes completely dry using paper towels.

This step is important because removing excess moisture helps the outside become crisp instead of steaming.


Step 2: Season the Pork

Place the pork belly cubes in a large bowl.

Add:

  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Chili powder (if using)

Toss everything together until every piece is evenly coated.

Let the pork rest for 20 to 30 minutes so the seasoning can begin to penetrate the meat.


Step 3: Sear the Pork Belly

Heat a large skillet or heavy pan over medium-high heat.

Add a small amount of oil.

Place the pork belly cubes in the pan without overcrowding. Work in batches if necessary.

Sear each side for about 2 to 3 minutes until golden brown.

The goal is not to cook the pork completely at this stage. The purpose is to create a flavorful crust and begin rendering the fat.

Remove the pork from the pan and set aside.


Step 4: Slow Cook the Pork Belly

Transfer the browned pork belly cubes to a slow cooker, baking dish, or covered oven-safe pot.

Add:

  • Soy sauce
  • Honey or brown sugar
  • Rice vinegar
  • Sesame oil
  • Garlic
  • Ginger
  • Oyster sauce
  • Chili sauce

Mix well so the pork is coated with the marinade.

Slow Cooker Method:

Cook on:

  • LOW for 5–6 hours
    or
  • HIGH for 3–4 hours

The pork is ready when it becomes very tender and can easily be pierced with a fork.

Oven Method:

Cover tightly with foil and bake at:

325°F (160°C) for 2½–3 hours

until tender.


Step 5: Drain and Prepare for Crisping

Once the pork belly is tender, carefully remove the pieces from the cooking liquid.

Place them on a baking tray lined with parchment paper.

Save some of the cooking sauce because it can be reduced into a delicious glaze.

Let the pork sit uncovered for about 10 minutes. This allows the surface moisture to evaporate, helping it crisp better.
