Crispy Pork Belly Bites: Golden, Crunchy, and Tender in Every Bite

For a simple sweet-and-savory glaze:

  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon sesame oil
  • A small pinch of chili flakes, optional

You can also serve the pork belly bites with your favorite barbecue sauce, spicy mayo, honey mustard, or a simple soy-based dipping sauce.

Step 1: Prepare the Pork Belly

Begin by patting the pork belly completely dry with paper towels. This step may seem minor, but removing excess moisture helps the surface brown rather than steam.

If your pork belly has skin attached, remove it for this particular bite-sized recipe unless you’re specifically aiming for crackling. Once the pork belly is dry, place it on a cutting board and trim away any extremely thick or uneven pieces of fat while leaving enough fat behind to keep the meat juicy.

Cut the pork belly into roughly 1-inch cubes.

Try to keep the pieces relatively similar in size. Uniform pieces will cook at approximately the same rate, so you won’t end up with some pieces being perfectly crisp while others are undercooked.

Step 2: Season the Pork

Place the pork belly cubes into a large mixing bowl.

Add the olive oil, salt, smoked paprika, garlic powder, onion powder, black pepper, chili powder, and brown sugar. Toss everything together until the pork is evenly coated.

The combination of smoked paprika and brown sugar is particularly useful because it creates a flavorful crust as the pork browns. The sugar also encourages caramelization, so keep an eye on the pork during the final cooking stage.

For an even deeper flavor, let the seasoned pork rest in the refrigerator for 30 minutes to 2 hours. If you’re short on time, you can cook it immediately.

Step 3: Arrange the Pork

Preheat your oven to 400°F (200°C).

Line a large baking sheet with foil or parchment paper and place a wire rack over it if you have one.

Arrange the pork belly pieces in a single layer, leaving a little space between each piece. Avoid overcrowding the pan. When pieces are packed too closely together, steam can become trapped between them, making it harder to achieve that crispy exterior.

A wire rack is especially helpful because hot air can circulate underneath the pork while the rendered fat drips away.

Step 4: Begin Cooking

Place the tray in the preheated oven and cook the pork belly for approximately 25–30 minutes.

At this stage, the pork will begin rendering its fat and developing a golden-brown surface. Carefully turn the pieces halfway through cooking so that multiple sides have an opportunity to brown.

Cooking time can vary depending on the size of your cubes and your oven, so use appearance and internal temperature rather than the clock alone.

For food safety, pork should reach a safe internal temperature. Because pork belly is a fatty, collagen-rich cut, it often becomes especially tender when cooked beyond the minimum safe temperature.

Step 5: Increase the Heat for Maximum Crispiness

Once the pork is cooked through and beginning to brown, increase the oven temperature to 450°F (230°C).

Return the pork to the oven for another 8–12 minutes, turning once if necessary.

This final high-heat stage is where the magic happens. The edges should become deeply golden, browned, and crisp while the inside remains tender.

Keep a close eye on the pork during this stage, particularly because the brown sugar in the seasoning can darken quickly.

If your oven has a broiler setting, you can also place the pork under the broiler for the final 1–3 minutes. Stay nearby and watch carefully because the surface can go from beautifully caramelized to burnt very quickly.
