Why You’ll Love This Recipe

Crockpot Beef and Noodles is a classic comfort food that offers several benefits:

  • Easy preparation with minimal hands-on time
  • Budget-friendly ingredients
  • Rich, hearty flavor
  • Perfect for meal prep and leftovers
  • Family-friendly and filling
  • Ideal for cold weather dinners

The long, slow cooking process allows the beef to become incredibly tender while creating a flavorful broth that coats every bite of noodles.

Ingredients

For the Beef

  • 2 pounds beef chuck roast
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

For the Noodles

  • 12 ounces egg noodles
  • 2 tablespoons butter
  • Fresh parsley for garnish (optional)

Equipment Needed

  • Slow cooker (6-quart recommended)
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Two forks for shredding beef

Step 1: Prepare the Ingredients

Start by trimming any excess fat from the chuck roast. While some marbling is desirable for flavor and tenderness, removing large pieces of fat helps prevent the dish from becoming greasy.

Dice the onion and mince the garlic. Having all ingredients prepared before assembling the slow cooker makes the process quick and easy.

Step 2: Add Ingredients to the Crockpot

Place the diced onion and minced garlic into the bottom of the slow cooker. Set the beef roast on top of the vegetables.

Pour in the beef broth and Worcestershire sauce. Sprinkle the salt, pepper, thyme, and parsley evenly over the roast.

The broth should partially cover the beef, allowing it to slowly absorb flavor while remaining moist during cooking.

Step 3: Slow Cook the Beef

Cover the crockpot with the lid and cook:

  • Low setting: 7–8 hours
  • High setting: 4–5 hours

The beef is ready when it easily falls apart when pierced with a fork. The connective tissues will have broken down, creating tender, juicy meat.

Avoid lifting the lid frequently, as this releases heat and can increase cooking time.

Step 4: Shred the Beef

Once fully cooked, carefully remove the beef from the slow cooker and place it on a cutting board or large plate.

Using two forks, shred the meat into bite-sized pieces. The beef should separate effortlessly if it has cooked long enough.

Return the shredded beef to the slow cooker and stir it into the flavorful broth.
