Crockpot Goulash

 

Instructions

  1. Brown the Beef

    • In a large skillet over medium heat, cook the ground beef until browned.

    • Add diced onion, green pepper, red pepper, and garlic. Cook until veggies are tender.

  2. Build the Base

    • Transfer the beef and veggie mixture to a 6-quart slow cooker.

    • Stir in tomato sauce, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.

  3. Slow Cook

    • Cover and cook on HIGH for 3 ½ hours (or LOW for about 6 hours).

  4. Add Pasta & Peas

    • About 1 hour before serving, cook the macaroni separately according to package directions.

    • Stir the cooked pasta and frozen peas into the crockpot about 30 minutes before serving.

  5. Finish & Serve

    • Cover and let sit until everything is heated through.

    • Garnish with fresh parsley or shredded cheese, and serve warm.
