Using a crockpot makes the process easier because the low, slow cooking method prevents the potatoes from drying out. The sauce slowly thickens as the potatoes release their natural starch, creating a smooth and comforting dish.

This recipe is also very versatile. You can add cheese, bacon, herbs, mushrooms, or even cooked chicken to create your own variation.


Ingredients

For the Potatoes

  • 3 pounds Yukon Gold or Russet potatoes
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese, optional
  • 2 tablespoons fresh parsley, chopped, for garnish

For the Creamy Sauce

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme or rosemary, optional

Optional Additions

  • 6 slices cooked bacon, crumbled
  • 1 cup mushrooms, sliced
  • Green onions
  • Parmesan cheese
  • Ham cubes
  • Extra cheddar cheese on top

Step 1: Prepare the Crockpot

Before preparing the potatoes, lightly grease the inside of the slow cooker with butter or cooking spray.

This prevents the potatoes from sticking and makes cleanup easier.

A 6-quart slow cooker works best for this recipe because it allows enough space for several layers of potatoes and sauce.


Step 2: Prepare the Potatoes

Wash and peel the potatoes.

Slice them into thin, even slices, about ⅛ inch (3 mm) thick.

The thickness is important. If the slices are too thick, they may take longer to cook and the texture will not be as creamy. If they are too thin, they can break apart and become mushy.

A mandoline slicer can help create evenly sized slices, but a sharp knife works as well.

After slicing, place the potatoes in cold water for a few minutes, then drain and pat them dry.

This removes some excess starch and helps create a smoother sauce.


Step 3: Make the Creamy Sauce

Place a saucepan over medium heat.

Add the butter and allow it to melt.

Add the flour and whisk continuously for about 1 minute. This creates a roux, which helps thicken the sauce.

Slowly pour in the milk while whisking to prevent lumps.

Add the heavy cream and continue stirring until the sauce begins to thicken.

This usually takes about 5 minutes.

Remove the saucepan from the heat and stir in:

  • Salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Paprika
  • Thyme or rosemary

Finally, mix in the sour cream until smooth.

The sauce should be creamy, slightly thick, and flavorful.


Step 4: Layer the Potatoes in the Crockpot

Begin by placing a layer of potato slices at the bottom of the slow cooker.

Add some sliced onions and a little minced garlic.

Pour some of the creamy sauce over the potatoes.

Sprinkle a small amount of cheddar cheese on top.

Repeat the layers:

  1. Potatoes
  2. Onion and garlic
  3. Cream sauce
  4. Cheese

Continue until all ingredients are used.

Finish with a layer of sauce and cheese on top.

Layering allows every potato slice to absorb the creamy flavor while cooking.
