Deep Dish Apple Crisp

I love apple pies, but I don’t always have the time to bake a pie crust. After some experimenting, I perfected this Deep Dish Apple Crisp recipe as a quicker alternative. It’s a warm, comforting dessert that’s easy to make and pairs perfectly with ice cream. My husband was eager to dig in, so much so that I couldn’t even snap a photo before he dove in!

Ingredients:

4 large Granny Smith apples, peeled and sliced (enough to line the bottom of an 8-inch deep dish pie plate)

2 eggs

1 cup sugar (reserve ¼ cup to mix with 1 tsp cinnamon)

2 tablespoons melted butter (or margarine)

1 cup white flour

1 teaspoon baking soda

1 teaspoon vanilla extract
