Directions:
Preheat your oven to 350°F (175°C).
Peel and slice the apples, then arrange them to cover the bottom of an 8-inch pie dish.
In a small bowl, combine the reserved ¼ cup of sugar with 1 teaspoon of cinnamon, and sprinkle it evenly over the apples.
In a separate bowl, mix together the remaining sugar, eggs, melted butter, flour, baking soda, and vanilla extract until well combined.
Using a spoon, carefully spread the topping mixture over the apples.
Bake for 40-45 minutes, or until the topping is golden brown and crispy.
Serve warm with a scoop of vanilla ice cream, and enjoy!
