For the Soup:

  • 1 lb (450 g) boneless, skinless chicken breasts or thighs
  • 8 cups (2 liters) chicken broth (homemade or store-bought)
  • 2 medium carrots, peeled and sliced into thin rounds
  • 2 celery stalks, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons olive oil or unsalted butter
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)
  • ½ teaspoon dried rosemary (optional)
  • Salt and freshly ground black pepper, to taste
  • 6 oz (170 g) egg noodles or your favorite pasta
  • Optional: a squeeze of lemon juice or a dash of hot sauce for added flavor

👩‍🍳 Step-by-Step Instructions

Step 1: Prepare the Chicken

  1. If using raw chicken, season it lightly with salt and pepper.
  2. Heat a large pot or Dutch oven over medium heat and add 1 teaspoon of olive oil or butter.
  3. Add the chicken and sear it lightly on both sides for 2–3 minutes (it doesn’t need to be fully cooked at this stage).
  4. Remove the chicken from the pot and set aside.

Step 2: Sauté the Vegetables

  1. In the same pot, add the remaining teaspoon of olive oil or butter.
  2. Sauté the chopped onions, carrots, and celery over medium heat for 5–7 minutes until the onions become translucent and the vegetables start to soften.
  3. Add the minced garlic and sauté for another 30 seconds, until fragrant.

Step 3: Build the Broth

  1. Return the chicken to the pot.
  2. Pour in the chicken broth and stir in the thyme, parsley, rosemary, salt, and pepper.
  3. Bring the mixture to a gentle boil, then reduce the heat and simmer for 20–25 minutes, or until the chicken is fully cooked and the vegetables are tender.

Step 4: Shred the Chicken

  1. Remove the cooked chicken from the pot and place it on a cutting board.
  2. Using two forks, shred the chicken into bite-sized pieces.
  3. Return the shredded chicken to the pot.
