
Double Patty Melt: Crispy, Cheesy, and Packed With Caramelized Onion Flavor
Few comfort foods are as satisfying as a classic patty melt. Take everything people love about a juicy burger—seasoned beef, melted cheese, and rich toppings—and sandwich it between slices of golden, buttery toasted bread. Now double the beef, add deeply caramelized onions, and you have a Double Patty Melt that is hearty, crispy, cheesy, and incredibly flavorful.
Unlike a traditional burger served on a soft bun, a patty melt gets its signature character from the bread. The outside becomes beautifully crisp and golden in a skillet while the inside stays tender enough to soak up all the savory juices from the beef and onions. The combination creates a meal that feels both nostalgic and indulgent.
The key to making a great Double Patty Melt is balancing all the components. The beef should be thin enough to cook quickly and develop browned edges, the onions should be cooked slowly until sweet and deeply golden, and the bread should be toasted without becoming so hard that it overwhelms the filling.
Ingredients
For the Caramelized Onions
- 2 large yellow onions, thinly sliced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1 teaspoon Worcestershire sauce
- 1 teaspoon brown sugar, optional
- 1–2 tablespoons water as needed
For the Patties
- 1 pound ground beef, preferably 80/20
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 4 slices American cheese
- 4 slices Swiss cheese, or your preferred melting cheese
For the Sandwiches
- 8 slices sturdy sandwich bread, such as rye, sourdough, or Texas toast
- 4 tablespoons softened butter
- 1–2 tablespoons mayonnaise, optional
- Additional butter or oil for the skillet
Step 1: Start With the Onions
The caramelized onions are one of the most important parts of a patty melt, so give them enough time to develop their flavor.
Heat a large skillet over medium-low heat. Add the butter and olive oil. Once the butter melts, add the thinly sliced onions and sprinkle them with salt.
Stir the onions so they are evenly coated with the fat. Let them cook slowly, stirring every few minutes.
At first, the onions will soften and release moisture. As they continue cooking, their natural sugars will concentrate and their color will gradually change from white to golden brown.
This process can take around 25–35 minutes, depending on the heat and the amount of onions in the pan.
If the onions begin sticking to the skillet or becoming darker than you want, add a small splash of water and scrape the bottom of the pan. Continue cooking until they become soft, deeply golden, and almost jam-like.
Stir in the Worcestershire sauce near the end. If you prefer a slightly sweeter onion mixture, add the brown sugar as well.
Remove the onions from the skillet and set them aside.
Step 2: Prepare the Beef
Place the ground beef in a bowl and add the salt, black pepper, garlic powder, onion powder, and Worcestershire sauce.
Mix gently until the seasoning is distributed.
Avoid aggressively kneading the meat. Overworking ground beef can make the patties dense instead of tender.
Divide the mixture into four equal portions.
Because this is a Double Patty Melt, each sandwich will contain two thin beef patties.
Step 3: Shape Thin Patties
Shape each portion of beef into a thin rectangular or oval patty slightly larger than your slices of bread.
The patties will shrink slightly as they cook, so making them a little larger than the bread helps ensure every bite contains plenty of beef.
Thin patties are ideal for a patty melt because they cook quickly and develop plenty of browned edges.
Step 4: Cook the Patties
Heat the same skillet over medium-high heat. If there isn’t enough fat left in the skillet, add a small amount of oil.
Place the patties in the hot skillet without overcrowding them.
Cook for approximately 2–3 minutes on the first side, then flip them.
Cook for another 1–2 minutes, or until the beef is cooked to your preferred doneness.
During the final moments of cooking, place a slice of American cheese and a slice of Swiss cheese on each patty.
Cover the skillet briefly with a lid to help the cheese melt.
Once the cheese is soft and gooey, transfer the patties to a plate.
Step 5: Prepare the Bread
Spread softened butter evenly over one side of each slice of bread.
For an extra-rich sandwich, you can mix a little mayonnaise into the butter. The mayonnaise helps promote an even golden crust while adding another layer of flavor.
Make sure the butter reaches close to the edges of the bread. This is what creates that irresistible crisp exterior.
Step 6: Assemble the Double Patty Melt
Place four slices of bread butter-side down.
Add the first cheesy beef patty to each sandwich.
Top each patty with a generous portion of caramelized onions.
Place the second cheesy beef patty on top.
Finish with another slice of bread, keeping the buttered side facing outward.
At this point, you should have four substantial sandwiches, each containing two beef patties, melted cheese, and caramelized onions.
