Easy Chinese Egg Rolls Recipe: Crispy, Golden, and Bursting with Flavor

Chinese egg rolls are a beloved appetizer found in restaurants all over the world. These crunchy delights feature a flavorful filling of vegetables, sometimes with meat, wrapped in thin dough and fried to a perfect golden crisp. Making them at home is easier than you might think—and the result is fresher, tastier, and more satisfying than takeout.

Below, you’ll find a step-by-step guide to creating Easy Chinese Egg Rolls, from preparing the filling to wrapping and frying them perfectly.

🧺 Ingredients You’ll Need

For the Filling:

  • 1 tablespoon vegetable oil
  • 1/2 pound ground pork or chicken (optional for non-vegetarian version)
  • 2 cups finely shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup bean sprouts (optional but adds crunch)
  • 3 green onions, finely sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

For the Wrapping & Frying:

  • 12 egg roll wrappers (found in most grocery stores or Asian markets)
  • 1 egg (lightly beaten, for sealing)
  • Oil for deep frying (vegetable or peanut oil works best)

For Serving:

  • Sweet and sour sauce, plum sauce, or soy sauce

🥢 Step-by-Step Instructions

Step 1: Prepare the Filling

  1. Cook the meat (if using):
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the ground pork or chicken and cook until browned, breaking it apart with a spatula. Drain any excess fat.
  2. Add aromatics and vegetables:
Stir in minced garlic and cook for 30 seconds until fragrant. Add shredded cabbage, carrots, and bean sprouts. Cook for about 3–4 minutes until the vegetables are softened but still slightly crisp.
  3. Season the mixture:
Pour in soy sauce, sesame oil, and a pinch of salt and pepper. Toss everything together to coat evenly. Taste and adjust seasoning if needed.
  4. Cool the filling:
Transfer the filling to a bowl and let it cool completely before wrapping. A cooled filling helps prevent the wrappers from tearing or becoming soggy.

Step 2: Prepare the Wrappers

  1. Lay an egg roll wrapper on a clean, dry surface with one corner facing you (like a diamond shape).
  2. Spoon about 2 tablespoons of the filling into the center of the wrapper.
  3. Fold the bottom corner up over the filling and tuck it gently underneath.
  4. Fold in both side corners toward the center—like you’re making an envelope.
  5. Roll it tightly toward the top corner. Brush the top edge with beaten egg to seal.
  6. Repeat the process with the remaining wrappers and filling.

Tip: Keep the rolled egg rolls covered with a damp towel while you finish the rest so they don’t dry out.
