Ingredients

Here is everything you need to make these delicious no-bake cookies.

For the Cookie Base

  • 2 cups crushed vanilla wafers or shortbread cookies
  • 1 cup sweetened shredded coconut
  • 1/2 cup melted butter
  • 1/4 cup brown sugar

For the Caramel Layer

  • 1 bag soft caramels
  • 3 tablespoons heavy cream or milk
  • 1 teaspoon vanilla extract

For the Chocolate Finish

  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or butter

Step-by-Step Instructions

Step 1: Toast the Coconut

Toasting the coconut gives these cookies their signature Samoa flavor.

Place the shredded coconut into a dry skillet over medium-low heat. Stir continuously for about 5 to 7 minutes until the coconut becomes golden brown and fragrant.

Be careful not to burn it because coconut browns quickly.

Once toasted, transfer it to a plate and let it cool.

Step 2: Prepare the Cookie Mixture

Crush the cookies into fine crumbs using a food processor or by placing them in a sealed bag and crushing them with a rolling pin.

In a large bowl, combine:

  • Cookie crumbs
  • Melted butter
  • Brown sugar
  • Half of the toasted coconut

Mix until the texture resembles wet sand and holds together when pressed.

Step 3: Shape the Cookies

Line a baking tray or plate with parchment paper.

Scoop small portions of the mixture and form them into round cookie shapes. Slightly flatten each one with your hand.

For a traditional Samoa appearance, make a small hole in the center of each cookie using your finger or the back of a spoon.

Place the shaped cookies into the refrigerator for about 15 minutes to firm up.

Step 4: Melt the Caramel

Unwrap the caramels and place them into a microwave-safe bowl with the cream or milk.

Heat in short intervals of 20 to 30 seconds, stirring between each interval, until smooth and creamy.

Add the vanilla extract and stir well.
