Preheat your oven to 350°F (175°C) and generously grease two loaf pans. You can also bake this as one large loaf or in a 9-inch cake pan.

In a large mixing bowl, beat the eggs and sugar together for about 5 minutes, until the mixture is light and nearly doubled in volume. This step is key—don’t skip it!

Add the butter, vanilla, and almond extracts, mixing until smooth.

Gently fold in the flour, baking powder, and salt until just combined, then stir in the cranberries.

Pour the batter evenly into the prepared pans.

For the crumble topping, combine the brown sugar, flour, and butter in a small bowl until the mixture resembles coarse sand. Sprinkle over the top of the loaves.

Bake for 45–50 minutes if using two loaves, or 60–70 minutes for a single large loaf, until a toothpick inserted in the center comes out clean.

Let the loaves cool completely before slicing.
