
Fluffy Japanese-Style Soufflé Pancakes: A Soft, Cloud-Like Pancake Recipe
Fluffy Japanese-style soufflé pancakes are tall, soft, airy pancakes with a delicate texture that feels almost like eating a sweet breakfast cloud. Unlike regular pancakes, which are usually flat and quick to cook, soufflé pancakes get their height and softness from whipped egg whites folded gently into the batter. The result is a beautiful stack of thick pancakes with golden sides, a tender center, and a light melt-in-your-mouth texture.
These pancakes look impressive, but they can be made at home with simple ingredients. The most important parts are whipping the egg whites correctly, folding the batter gently, and cooking the pancakes slowly over low heat.
Ingredients
For the Pancake Batter
- 2 large eggs, separated
- 2 tablespoons milk
- ½ teaspoon vanilla extract
- ¼ cup all-purpose flour
- ½ teaspoon baking powder
- 2 tablespoons granulated sugar
- ¼ teaspoon lemon juice or cream of tartar
- 1 pinch salt
- Butter or neutral oil for greasing the pan

Step 1: Separate the Eggs
Start by separating the egg yolks from the egg whites.
Place the yolks in one mixing bowl and the whites in another clean, dry bowl. Be careful not to get any yolk into the egg whites because even a small amount of fat can stop the whites from whipping properly.
For best results, use cold eggs when separating them, then let the egg whites sit for a few minutes before whipping.
Step 2: Make the Egg Yolk Batter
Add the milk and vanilla extract to the egg yolks. Whisk until the mixture becomes smooth and pale yellow.
Next, sift in the flour, baking powder, and a small pinch of salt. Mix gently until you have a thick, smooth batter.
Do not overmix. The goal is to combine the ingredients without making the batter heavy.
Set this bowl aside while you prepare the meringue.
Step 3: Whip the Egg Whites
Add lemon juice or cream of tartar to the egg whites. This helps stabilize the meringue and makes the pancakes hold their shape better.
Using a hand mixer, beat the egg whites on medium speed until they become foamy.
Gradually add the sugar, one spoon at a time, while continuing to beat. Increase the speed and whip until stiff peaks form.
The meringue should look glossy and thick. When you lift the beaters, the peak should stand upright without collapsing.
Do not under-whip, because the pancakes may flatten. Do not over-whip, because the meringue can become dry and difficult to fold.
