French Onion Chicken: A Cozy, Cheesy Dinner Full of Caramelized Onion Flavor

If you love the rich, comforting taste of French onion soup, this French Onion Chicken is a delicious way to turn those classic flavors into a hearty dinner. Tender chicken breasts are seasoned and seared until golden, then nestled into a savory sauce made with deeply caramelized onions and flavorful broth. The finishing touch is a generous layer of melted cheese that turns beautifully golden and bubbly in the oven.

What makes this dish especially satisfying is the contrast between the sweet, slowly cooked onions, savory pan sauce, juicy chicken, and creamy melted cheese. It feels like a restaurant-style meal, but it can easily be prepared at home with simple ingredients.

Why You’ll Love This French Onion Chicken

This recipe brings together several comforting flavors in one skillet:

  • Tender, golden-brown chicken with plenty of savory seasoning
  • Slow-cooked onions that become sweet, soft, and deeply flavorful
  • Rich onion-infused broth that keeps the chicken moist
  • Melted cheese for a creamy, irresistible topping
  • One-pan convenience, which means less cleanup afterward
  • A cozy flavor that works equally well for a family dinner or a special weekend meal

The key to getting the best flavor is not rushing the onions. Properly caramelized onions are what give the dish its signature French onion character.

Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Caramelized Onions

  • 3 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 teaspoon brown sugar, optional
  • 2 cloves garlic, finely minced

For the Sauce

  • 1 1/2 cups beef broth or chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon black pepper

For the Cheese Topping

  • 1 to 1 1/2 cups shredded Gruyère cheese
  • 1/2 cup shredded mozzarella, optional
  • A little fresh parsley or thyme for garnish

Step-by-Step Method

Step 1: Prepare the Chicken

Start by patting the chicken breasts dry with paper towels. This helps them brown properly instead of steaming in the skillet.

If the chicken breasts are particularly thick, carefully slice them horizontally into thinner pieces or gently pound them to an even thickness. This allows them to cook more evenly.

Season both sides with garlic powder, dried thyme, salt, and black pepper.

Set the seasoned chicken aside while you prepare the skillet.

Step 2: Sear the Chicken

Heat a large oven-safe skillet over medium-high heat. Add the olive oil and butter.

Once the butter has melted and the pan is hot, place the chicken into the skillet in a single layer.

Cook for about 3–5 minutes per side, depending on thickness, until the outside is nicely golden brown.

The chicken does not need to be completely cooked through at this point because it will finish cooking later in the sauce.

Transfer the chicken to a plate and loosely cover it while you prepare the onions.

Step 3: Slowly Caramelize the Onions

Reduce the heat to medium or medium-low.

Add the butter and olive oil to the same skillet. Scrape up any flavorful browned bits left behind by the chicken.

Add the thinly sliced onions and sprinkle them with salt.

Cook the onions slowly, stirring every few minutes. At first, they will become soft and translucent. As they continue cooking, their natural sugars will concentrate and the onions will gradually turn golden brown.

This process can take around 20–30 minutes.

If the onions begin sticking too much or browning too quickly, reduce the heat and add a small splash of broth or water.

For a slightly sweeter flavor, you can add a teaspoon of brown sugar, although properly caramelized onions are naturally sweet enough without it.
