Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • ½ cup beef broth (low sodium preferred)
  • 1 tbsp balsamic vinegar (optional, for depth)
  • 1 cup shredded Gruyère cheese (or Swiss, mozzarella as alternatives)
  • ½ cup shredded Parmesan cheese
  • Fresh parsley (for garnish)

Method

Step 1: Preheat and Prep

Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to fit all chicken breasts in a single layer.

Step 2: Caramelize the Onions

  1. Heat the olive oil and butter in a large skillet over medium heat.
  2. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for about 20-25 minutes until onions are deeply golden and caramelized.
  3. Add garlic, thyme, and balsamic vinegar (if using). Stir for another minute.
  4. Pour in the beef broth and stir well, deglazing the pan. Simmer for 2-3 more minutes until slightly thickened. Remove from heat.
