Garbage Bread: A Delicious Way to Use Up Leftovers

Garbage Bread is one of those wonderfully creative recipes that proves you don’t need fancy ingredients to make something incredibly tasty. Despite its unusual name, this dish is anything but garbage. The name simply comes from the idea of using whatever ingredients you already have in your kitchen—leftover meats, vegetables, cheeses, or sauces—and rolling them into a delicious stuffed bread loaf.

This comforting recipe is similar to a stuffed pizza roll or savory stromboli. The outside becomes golden and crisp while the inside is packed with warm, flavorful fillings. Garbage Bread is perfect for family dinners, game nights, quick lunches, or even party appetizers. Best of all, it’s flexible—you can customize it however you like.

Below is a simple step-by-step guide to making this fun and satisfying dish.

Ingredients

For the dough (or use store-bought pizza dough):

  • 3 cups all-purpose flour
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water
  • 1 tablespoon olive oil

For the filling (example combination):

  • 1 cup cooked ground beef or sausage
  • ½ cup cooked bacon pieces
  • 1 cup shredded mozzarella cheese
  • ½ cup cheddar cheese
  • ½ cup diced onions
  • ½ cup diced bell peppers
  • ½ cup pizza sauce or marinara
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

For topping:

  • 1 egg (for egg wash)
  • 1 tablespoon melted butter
  • ½ teaspoon garlic powder
  • 1 tablespoon grated parmesan cheese

Step-by-Step Instructions

Step 1: Prepare the Dough

If you are making the dough from scratch, start by activating the yeast. In a bowl, mix warm water, sugar, and yeast. Let the mixture sit for about 5–10 minutes until it becomes foamy. This means the yeast is active.

In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and olive oil, then mix until a soft dough forms.

Knead the dough on a lightly floured surface for about 8–10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a towel, and allow it to rise for about one hour or until it doubles in size.

If you are short on time, you can use store-bought pizza dough instead.

Step 2: Prepare the Filling

While the dough rises, prepare your fillings. Cook any raw meats such as ground beef or sausage until fully browned, then drain excess grease.

Chop your vegetables into small pieces so they distribute evenly inside the bread. Pre-cook vegetables like onions or peppers if you prefer a softer texture.

Combine the cooked meat, vegetables, cheeses, and seasonings in a bowl. This mixture will create the flavorful center of your Garbage Bread.
