Garlic Butter Roasted Red Potatoes: A Crispy, Flavorful Side Dish Recipe
Garlic Butter Roasted Red Potatoes are a simple, hearty, and delicious side dish made with tender red potatoes, melted butter, fresh garlic, herbs, and seasonings. The potatoes roast until they are golden and crisp on the outside while staying soft and creamy on the inside.
This recipe is perfect for family dinners, holiday meals, barbecues, or weeknight cooking. It pairs beautifully with roasted chicken, steak, grilled fish, burgers, eggs, or even a fresh salad. The best part is that it uses basic ingredients but delivers rich, comforting flavor.
Why Red Potatoes Work Best
Red potatoes are excellent for roasting because they have thin skins and a naturally creamy texture. You do not need to peel them. The skin becomes slightly crisp in the oven, while the inside stays buttery and soft.
Their mild flavor also makes them perfect for garlic butter, herbs, parmesan, paprika, or lemon seasoning.
Ingredients
Main Ingredients
- 2 pounds red potatoes
- 4 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried parsley
- ½ teaspoon dried thyme or Italian seasoning
- ¾ teaspoon salt, or to taste
- ½ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons grated parmesan cheese, optional
Optional Additions
- ½ teaspoon chili flakes for heat
- 1 tablespoon lemon juice for brightness
- 1 teaspoon rosemary for a stronger herb flavor
- Extra melted butter for serving
Step 1: Wash and Cut the Potatoes
Start by washing the red potatoes very well under running water. Since the skins stay on, make sure to scrub away any dirt.
Dry the potatoes with a clean kitchen towel. This is important because dry potatoes roast better and become crispier.
Cut each potato into halves or quarters, depending on its size. Try to keep the pieces similar in size so they cook evenly. Small potatoes can be halved, while larger ones should be cut into quarters.
Step 2: Preheat the Oven
Preheat your oven to 425°F / 220°C.
A hot oven is important for roasted potatoes. High heat helps the outside become golden and crisp while the inside cooks until tender.
Line a baking sheet with parchment paper or lightly grease it with oil. Use a large baking sheet so the potatoes have enough space.
