German Cabbage and Dumplings

A comforting, rustic dish rooted in tradition

German cuisine is known for its hearty, soul-warming dishes, and German Cabbage and Dumplings is a perfect example. This classic meal combines tender cabbage, savory flavors, and soft, pillowy dumplings into one satisfying dish. Often enjoyed during colder months, it’s simple, budget-friendly, and deeply comforting.

Below is a detailed, step-by-step guide to making this traditional favorite at home.

🥬 Ingredients

For the cabbage:

  • 1 medium green cabbage (chopped)
  • 1 small onion (finely chopped)
  • 2 tablespoons butter or oil
  • 1–2 cloves garlic (minced)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon caraway seeds (optional, but traditional)
  • 1 cup chicken or vegetable broth
  • 1 tablespoon vinegar (apple cider or white)

For the dumplings:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon butter (softened)
  • 1 cup milk (or water)

🍲 Step-by-Step Instructions

Step 1: Prepare the cabbage

Start by removing any tough outer leaves from the cabbage. Cut it into quarters, remove the core, and slice it into thin strips. Set aside.

Step 2: Sauté the aromatics

In a large pot or deep pan, melt the butter over medium heat. Add the chopped onion and cook for about 3–4 minutes until soft and slightly golden. Stir in the garlic and cook for another minute until fragrant.

Step 3: Cook the cabbage

Add the sliced cabbage to the pot. Stir well to coat it in the butter and onions.

  • Season with salt, pepper, and caraway seeds.
  • Pour in the broth and add the vinegar.

Cover the pot and let the cabbage cook over medium-low heat for about 20–25 minutes, stirring occasionally, until it becomes soft and slightly caramelized.
