German Chocolate Cake: A Rich, Moist Classic with Coconut-Pecan Frosting

German Chocolate Cake is a beloved American dessert known for its tender chocolate cake layers and its signature coconut-pecan filling. Despite its name, the cake was not originally created in Germany. Its name comes from Samuel German, who developed a type of sweetened baking chocolate for Baker’s Chocolate in the 19th century.

What makes this cake special is the contrast between the deep chocolate flavor of the cake and the sweet, buttery, nutty frosting. The coconut and pecans give every bite a pleasant chewiness, while the cake itself stays soft and moist.

This recipe creates a classic layered cake that works beautifully for birthdays, family celebrations, holidays, or simply when you want an impressive homemade dessert.

What Makes a Great German Chocolate Cake?

A successful German Chocolate Cake depends on a few important details:

  • Moist chocolate cake: The cake should be soft and tender rather than dry or crumbly.
  • Balanced chocolate flavor: Cocoa and melted chocolate create a richer flavor than cocoa alone.
  • Creamy coconut-pecan frosting: This is the defining feature of the cake.
  • Toasted pecans: Toasting intensifies their flavor and adds extra crunch.
  • Proper cooling: The frosting needs time to thicken before it is spread between the layers.

Ingredients

For the Chocolate Cake

  • 4 ounces semisweet or German-style sweet baking chocolate, chopped
  • ½ cup boiling water
  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1½ cups granulated sugar
  • ½ cup light brown sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk, room temperature
  • ½ cup hot coffee

For the Coconut-Pecan Frosting

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1½ cups sweetened shredded coconut
  • 1 cup finely chopped pecans
  • Pinch of salt

Optional Chocolate Decoration

  • 2 ounces semisweet chocolate
  • 1 teaspoon neutral oil or coconut oil

Step-by-Step Method

Step 1: Prepare the Chocolate

Place the chopped chocolate in a heatproof bowl.

Pour the boiling water over it and let it sit for about a minute. Stir gently until the chocolate has completely melted and the mixture is smooth.

Set it aside to cool slightly.

Tip: Don’t add extremely hot chocolate directly to the eggs or butter later. Allowing it to cool prevents the other ingredients from becoming overheated.


Step 2: Prepare the Cake Pans

Preheat your oven to 350°F (175°C).

Grease three 8-inch round cake pans. Line the bottoms with parchment paper and lightly grease the parchment as well.

Dust the pans lightly with cocoa powder or flour.

Using parchment on the bottom makes the finished cake much easier to remove without damaging the layers.


Step 3: Combine the Dry Ingredients

In a medium bowl, whisk together:

  • Flour
  • Cocoa powder
  • Baking soda
  • Baking powder
  • Salt

Whisking helps distribute the leavening agents evenly throughout the flour.

Set the mixture aside.


Step 4: Cream the Butter and Sugars

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until the mixture becomes light and fluffy.

This usually takes about 3–4 minutes with an electric mixer.

Don’t rush this step. Properly creamed butter incorporates air into the batter, helping produce a lighter cake.


Step 5: Add the Eggs

Add the eggs one at a time, beating well after each addition.

Scrape down the sides of the bowl occasionally so everything mixes evenly.

Add the vanilla extract and mix briefly.


Step 6: Add the Chocolate

Slowly pour the melted chocolate mixture into the butter mixture.

Beat on low speed until the chocolate is evenly incorporated.

The batter should now have a deep chocolate color and a smooth appearance.


Step 7: Combine the Wet and Dry Ingredients

Add about one-third of the dry ingredients to the chocolate mixture.

Mix gently.

Add half of the buttermilk and mix again.

Continue alternating the dry ingredients and buttermilk, finishing with the dry ingredients.

Avoid overmixing once the flour has been incorporated. Too much mixing can make the cake tougher.


Step 8: Add the Coffee

Pour in the hot coffee and gently mix until the batter is smooth.

The coffee doesn’t make the cake taste strongly like coffee. Instead, it helps intensify the chocolate flavor.

The batter may look relatively thin at this point. That’s perfectly normal.


Step 9: Divide and Bake the Cake

Divide the batter evenly among the three prepared cake pans.

Smooth the tops with a spatula.

Place the pans in the preheated oven and bake for approximately 25–30 minutes.

To check for doneness, insert a toothpick into the center of a cake layer. It should come out with a few moist crumbs but no wet batter.

Try not to overbake the cakes because even a few extra minutes can make chocolate cake noticeably drier.
