Glazed Almond Bar Cookies

There is something wonderfully old-fashioned about a good pan of bar cookies. They are simple to prepare, easy to slice, and perfect for sharing. These Glazed Almond Bar Cookies combine a tender, buttery cookie base with the delicate flavor of almonds and a smooth almond glaze that sets into a lightly crisp finish.

Unlike individual cookies that require repeated scooping and baking, these bars are prepared in one pan, making them especially convenient when you want a homemade dessert without spending a lot of time in the kitchen. The almond flavor is present throughout the cookie without being overpowering, while the glaze adds just enough sweetness to make each bite feel special.

Why You’ll Love These Almond Bars

These cookies have a soft, slightly chewy center with lightly golden edges. Ground or finely chopped almonds add texture and a subtle nuttiness, while almond extract gives the dessert its distinctive bakery-style flavor.

The glaze is intentionally simple. A mixture of powdered sugar, almond extract, and a little milk creates a silky topping that can be spread over the cooled bars. For an extra finishing touch, sliced almonds can be scattered over the glaze before it sets.

They are excellent for afternoon coffee, holiday cookie trays, bake sales, parties, or whenever you want a dessert that looks more elaborate than the effort required to make it.

Ingredients

For the Almond Cookie Bars

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup finely ground almonds or almond meal
  • 1/3 cup sliced almonds, optional

For the Almond Glaze

  • 1 1/2 cups powdered sugar
  • 2 tablespoons milk or heavy cream
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1–2 teaspoons additional milk, if needed

Step-by-Step Method

1. Prepare the Baking Pan

Preheat your oven to 350°F (175°C).

Line a 9 × 13-inch baking pan with parchment paper, leaving some parchment hanging over the sides. This makes it much easier to lift the finished bars from the pan before slicing.

Lightly grease the parchment and the exposed sides of the pan.

2. Cream the Butter and Sugar

Place the softened butter and granulated sugar in a large mixing bowl.

Beat them together for about 2–3 minutes, until the mixture becomes lighter in color and looks creamy.

This step is important because properly creamed butter helps create a tender texture rather than a dense, heavy cookie bar.

3. Add the Egg and Flavorings

Beat in the egg until completely incorporated.

Add the vanilla extract and almond extract. Mix again until everything is evenly combined.

The almond extract provides the characteristic flavor of these cookies, so even a small amount makes a noticeable difference.
