Gooey Cinnamon Cream Cheese Bites: A Sweet, Soft, Golden Dessert Recipe
Gooey Cinnamon Cream Cheese Bites are warm, soft, bite-sized pastries filled with sweet cream cheese, coated in cinnamon sugar, and baked until golden on the outside and creamy in the center. They taste like a mix between cinnamon rolls, cheesecake bites, and soft bakery pastries.
This recipe is perfect for breakfast treats, brunch tables, holiday mornings, family desserts, or late-night sweet cravings. The outside has a buttery cinnamon-sugar coating, while the inside stays rich, smooth, and slightly gooey from the cream cheese filling.
What Makes These Bites Special?
The magic of this dessert is the contrast. The dough becomes golden and soft, the cinnamon sugar adds warmth and sweetness, and the cream cheese filling melts slightly into the center. Each bite feels rich without being difficult to make.
You can prepare them with crescent roll dough, biscuit dough, puff pastry, or homemade soft dough. The easiest version uses refrigerated dough, making the recipe quick and beginner-friendly.
Ingredients
For the Bites
- 1 can refrigerated crescent roll dough or biscuit dough
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- 3 tablespoons melted butter
For the Cinnamon Sugar Coating
- ½ cup granulated sugar
- 1 tablespoon ground cinnamon
- ¼ teaspoon nutmeg, optional
For the Glaze
- ½ cup powdered sugar
- 1 to 2 tablespoons milk
- ½ teaspoon vanilla extract
Step 1: Prepare the Cream Cheese Filling
Place the softened cream cheese in a mixing bowl.
Add granulated sugar, powdered sugar, and vanilla extract. Mix until the filling becomes smooth and creamy.
The cream cheese should be soft before mixing. If it is too cold, the filling may become lumpy. Leave it at room temperature for about 20 to 30 minutes before using.
The filling should be thick enough to spoon into the dough without running.
Step 2: Prepare the Cinnamon Sugar
In a small bowl, mix the granulated sugar, cinnamon, and nutmeg if using.
Stir until the cinnamon is evenly blended through the sugar.
This mixture will coat the outside of the bites and create that classic warm cinnamon flavor.
