Ingredients
Serves 4-5
- For the pasta:
- 250g (8 oz) spaghetti, linguine, or your favorite pasta
- 4 cups water or vegetable broth
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For the veggie stir-fry:
- 2 tablespoons olive oil or butter
- 1 small onion, thinly sliced
- 1 bell pepper (any color), julienned
- 1 medium zucchini, diced
- 1 cup broccoli florets
- 1 medium carrot, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon chili flakes (optional)
- Fresh basil or parsley for garnish
Step-by-Step Instructions
Step 1: Cook the Pasta
- In a large, deep skillet or pot, heat 1 tablespoon of olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 30 seconds.
- Pour in the water or vegetable broth, season with salt and black pepper, and bring to a boil.
- Add the pasta to the pot. Stir occasionally to prevent sticking and cook until al dente, as per the package instructions. Most of the liquid should be absorbed by the end; if not, drain excess but reserve a little for later use.
Step 2: Prepare the Veggie Stir-Fry
- While the pasta cooks, prepare the vegetables. Wash, peel (if necessary), and chop them into bite-sized pieces.
- Once the pasta is done, remove it from the pot and set aside, leaving the pot free for the stir-fry.
- Heat 2 tablespoons of olive oil or butter in the same pot over medium heat.
- Add the onions and sauté for 2-3 minutes until translucent.
- Add the harder vegetables first, such as carrots and broccoli, as they take longer to cook. Stir-fry for 3-4 minutes.
- Toss in the bell peppers, zucchini, and cherry tomatoes. Sauté for another 2-3 minutes until all the vegetables are tender but still crisp.
