Step 1: Prepare the Potatoes

Start by peeling the potatoes and cutting them into medium-sized chunks. Try to cut the pieces evenly so they cook at the same speed.

Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt to the water. Starting the potatoes in cold water helps them cook evenly from the inside out.
