Ground Beef, Peppers, Onions, Eggs & Melted Cheese Casserole

There is something wonderfully comforting about a casserole that combines simple ingredients into one hearty, bubbling dish. This Ground Beef, Peppers, Onions, Eggs, and Melted Cheese Casserole is exactly that kind of meal. Savory ground beef is cooked with sweet peppers and onions, then combined with fluffy eggs and plenty of melted cheese before being baked until golden and set.

It is easy enough for a weeknight dinner, filling enough for a weekend brunch, and versatile enough to adapt to whatever vegetables or cheese you already have in the refrigerator.

Why You’ll Love This Casserole

This recipe is built around inexpensive, everyday ingredients, but the finished dish feels satisfying and substantial.

The ground beef provides a rich, savory base, while the peppers add sweetness and a little freshness. Slowly cooked onions bring additional depth, and the eggs bind everything together into a soft, tender casserole. A generous layer of cheese melts over the top, creating a golden, bubbly finish.

It is also a convenient make-ahead option. You can prepare the beef and vegetable mixture ahead of time, then assemble and bake the casserole when you are ready to eat.

Ingredients

For approximately 6 servings, you’ll need:

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons milk
  • 1 tablespoon olive oil, if needed
  • 2 cloves garlic, minced
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley, optional

Step 1: Prepare the Vegetables

Begin by preparing the vegetables so everything is ready before you start cooking.

Dice the onion into small, even pieces. Remove the seeds and membranes from the red and green bell peppers, then cut them into bite-sized pieces. Mince the garlic.

Keeping the vegetables relatively uniform in size helps them cook evenly and ensures that every serving contains a good mixture of beef, peppers, and onions.

Step 2: Brown the Ground Beef

Place a large skillet over medium-high heat and add the ground beef.

Break the beef apart with a wooden spoon or spatula as it cooks. Continue cooking for approximately 6–8 minutes, stirring occasionally, until the beef is browned and no longer pink.

Season it with about ½ teaspoon of the salt, the black pepper, paprika, and garlic powder.

If there is a large amount of excess fat in the skillet, carefully drain some of it. Leave a small amount behind because it can help flavor the vegetables.

Step 3: Cook the Onions and Peppers

Add the diced onion and bell peppers to the skillet with the browned beef.

Cook for approximately 5–7 minutes, stirring occasionally. The onions should become translucent and the peppers should begin to soften while still retaining a little texture.

Add the minced garlic during the final minute of cooking. Stir it through the mixture until fragrant.

Turn off the heat and set the skillet aside for a few minutes.
