Ground Beef Vegetable Soup: A Hearty, Flavorful Comfort Meal Made From Simple Ingredients

Ground Beef Vegetable Soup is a classic homemade dish that combines the rich, savory taste of seasoned beef with the freshness of vegetables and the warmth of a flavorful broth. It is the kind of meal that feels comforting on a cold evening, yet it is practical enough to prepare on a busy day. Unlike many complicated recipes, this soup relies on simple ingredients that work together to create a deep, satisfying flavor.

The beauty of Ground Beef Vegetable Soup is its flexibility. You can adjust the vegetables according to what you have available, make it lighter or heartier, and customize the seasoning to match your taste. The ground beef provides protein and richness, while vegetables add color, texture, vitamins, and natural sweetness.

Ingredients Needed

Main Ingredients

  • 500 grams ground beef
  • 2 tablespoons olive oil or cooking oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 medium potatoes, peeled and cubed
  • 2 celery stalks, chopped
  • 1 cup green beans, cut into small pieces
  • 1 cup corn kernels
  • 1 cup chopped tomatoes (fresh or canned)
  • 1 bell pepper, diced
  • 1.5–2 liters beef broth or vegetable broth

Seasoning Ingredients

  • 1 teaspoon salt (adjust according to taste)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 tablespoon tomato paste (optional, for deeper flavor)
  • Fresh parsley or cilantro for garnish

Optional Additions

  • Peas for extra sweetness
  • Chili flakes for a spicy version
  • Pasta or rice to make the soup more filling
  • Worcestershire sauce for a richer beef flavor

Step-by-Step Cooking Method

Step 1: Prepare the Ingredients

Before cooking, wash and prepare all vegetables. Chop the onion, garlic, carrots, celery, potatoes, and bell pepper into similar-sized pieces. Cutting vegetables evenly helps them cook at the same speed and creates a better texture in the final soup.

Prepare the ground beef by breaking it apart so it can cook evenly when added to the pot.

Step 2: Brown the Ground Beef

Heat a large soup pot over medium heat and add the oil.

Add the ground beef and cook for about 5–7 minutes, stirring occasionally. Break the beef into small pieces using a wooden spoon while it cooks.

Continue cooking until the meat changes from pink to brown. Browning the beef is an important step because it creates a deeper, richer flavor through caramelization.

If there is too much excess fat in the pot, carefully remove some of it while leaving a small amount for flavor.

Step 3: Cook the Aromatic Ingredients

Add the chopped onion to the browned beef and cook for 2–3 minutes until it becomes soft and slightly translucent.

Add minced garlic and cook for another 30 seconds to 1 minute. Be careful not to burn the garlic because it can create a bitter taste.

This step builds the foundation of the soup’s flavor.

Step 4: Add Tomato Paste and Seasonings

Add tomato paste, paprika, oregano, thyme, salt, and black pepper to the beef mixture.

Stir everything together and cook for about 1 minute.

Heating the spices briefly helps release their natural oils, making the soup more aromatic and flavorful.
