Ingredients

For the Bake

  • 1 pound ground beef
  • 2 cups mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 can (10.5 ounces) cream of mushroom soup
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 cup cooked rice, pasta, or diced potatoes (optional)
  • 2 tablespoons chopped parsley for garnish

Step 1: Prepare the Ingredients

Preheat your oven to 375°F (190°C).

Wash and slice the mushrooms. Dice the onion and mince the garlic. If using rice, pasta, or potatoes, ensure they are already cooked before assembling the casserole.

Step 2: Cook the Beef

Heat a large skillet over medium-high heat.

Add the ground beef and cook for about 6–8 minutes, breaking it apart with a spoon as it browns. Cook until no pink remains.

Drain any excess grease if necessary.

Step 3: Sauté the Vegetables

Add the olive oil to the skillet if needed.

Stir in the onions and cook for 3–4 minutes until softened. Add the mushrooms and continue cooking for another 5–6 minutes until they release their moisture and begin to brown.

Add the garlic and cook for 30 seconds until fragrant.

Season with salt, pepper, and Italian seasoning.

Step 4: Make the Creamy Mixture

In a mixing bowl, combine:

  • Cream of mushroom soup
  • Sour cream
  • Half of the cheddar cheese

Mix until smooth.

Add the cooked beef and mushroom mixture to the bowl and stir well. If using cooked rice, pasta, or potatoes, fold them into the mixture now.

Step 5: Assemble the Casserole

Lightly grease a 9×13-inch baking dish.

Spread the hamburger and mushroom mixture evenly in the dish.

Sprinkle the remaining cheddar cheese and all of the mozzarella cheese over the top.

The cheese layer will create a delicious golden crust as the casserole bakes.
