This recipe is especially useful for busy weeknights because it relies on simple ingredients and can even be prepared ahead of time. It is filling enough to serve as a complete dinner and makes excellent leftovers the following day.

  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil, if needed

Step 1: Prepare the Potatoes

Start by making the mashed potato topping.

Place the peeled and chopped potatoes in a large pot and cover them with cold water. Add a generous pinch of salt. Bring the water to a boil, then reduce the heat slightly and cook for approximately 15–20 minutes, or until the potatoes are completely tender when pierced with a fork.

Drain the potatoes thoroughly and return them to the warm pot for a minute or two. This allows excess moisture to evaporate and helps create fluffier mashed potatoes.

Add the butter and begin mashing. Slowly pour in the warm milk while continuing to mash until the potatoes become smooth and creamy.

For an extra-rich topping, stir in the sour cream. Season with salt and black pepper to taste.

If you enjoy a cheesy potato topping, mix in some shredded cheddar cheese.

Set the mashed potatoes aside while you prepare the filling.

Step 2: Brown the Ground Beef

Heat a large skillet or oven-safe skillet over medium-high heat.

Add the ground beef and break it apart with a wooden spoon or spatula. Cook for approximately 6–8 minutes, stirring occasionally, until the beef is browned and cooked through.

If there is a large amount of excess grease, carefully drain some of it from the skillet.

Keeping a little of the beef’s flavorful fat in the pan can help add richness to the filling.

Step 3: Cook the Aromatics and Vegetables

Add the diced onion and carrots to the skillet with the beef.

Cook for about 4–5 minutes, stirring occasionally, until the onion becomes soft and translucent and the carrots begin to soften.

Add the minced garlic and cook for another 30–60 seconds, just until fragrant.

Be careful not to brown the garlic too much, as burnt garlic can make the filling taste bitter.

Step 4: Build the Savory Gravy

Stir the tomato paste into the beef mixture and cook for about one minute. This brief cooking time helps deepen its flavor.

Sprinkle the flour evenly over the beef and vegetables. Stir thoroughly so the flour coats the ingredients.

Cook for approximately one minute to remove the raw flour taste.

Slowly pour in the beef broth while stirring continuously. Scrape the bottom of the skillet as you stir to loosen any browned bits left behind from the beef.

Add the Worcestershire sauce, dried thyme, rosemary, and paprika.

Season with salt and black pepper.

Bring the mixture to a gentle simmer and cook for approximately 5–7 minutes. The gravy should gradually thicken and coat the beef and vegetables without becoming overly thick.
