  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon smoked paprika
  • 1 bay leaf
  • 1 cup green beans, cut into smaller pieces
  • 1 cup frozen peas
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, for serving

Step 1: Prepare the Beef

Pat the beef cubes dry with paper towels. This small step helps the meat brown instead of simply steaming in the pot.

Season the beef generously with salt and black pepper.

Choose a large heavy-bottomed pot or Dutch oven so the beef can brown properly without overcrowding.

Step 2: Brown the Beef

Place the pot over medium-high heat and add the oil.

Once the oil is hot, add the beef in batches. Avoid putting all the meat into the pot at once because overcrowding can cause the beef to release too much moisture.

Brown the pieces for about 2–3 minutes per side, turning them occasionally until they develop a deep golden-brown exterior.

The beef does not need to be cooked through at this stage. The goal is to build flavor.

Transfer the browned beef to a plate and set it aside.

Step 3: Sauté the Aromatics

Reduce the heat to medium and add the diced onion to the same pot.

Cook for about 4–5 minutes, stirring occasionally, until the onion begins to soften. If there are browned bits stuck to the bottom of the pot, stir the onions around them. Those caramelized bits add tremendous flavor to the finished soup.

Add the minced garlic and cook for another 30–60 seconds, just until fragrant.

Step 4: Add the Tomato Paste and Seasonings

Stir the tomato paste into the onions and garlic.

Cook it for about 1 minute. Briefly cooking tomato paste helps deepen its flavor and gives the broth a richer color.

Add the dried thyme, dried parsley, smoked paprika, and Worcestershire sauce. Stir everything together so the seasonings coat the vegetables.
