  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon black pepper
  • 1 cup frozen peas

How to Make Hearty Vegetable Beef Soup

Step 1: Prepare the Beef

Pat the beef pieces dry with paper towels. This small step helps the meat brown instead of simply steaming when it hits the hot pot.

Season the beef lightly with salt and black pepper.

Place a large heavy-bottomed pot or Dutch oven over medium-high heat and add the olive oil. Once hot, add the beef in batches if necessary. Avoid overcrowding the pot, as too much meat at once can prevent proper browning.
