Hobo Dinner Hamburger Foil Packs: A Simple Step-by-Step Campfire-Style Meal

Hobo Dinner Hamburger Foil Packs are a classic comfort meal made with seasoned ground beef patties, potatoes, carrots, onions, and simple spices wrapped tightly in foil and cooked until tender. This recipe is popular because it is easy, affordable, filling, and requires very little cleanup.

The idea is simple: each person gets their own foil packet filled with meat and vegetables. As the packet cooks, the steam stays trapped inside, making the potatoes soft, the carrots tender, and the hamburger juicy. It is perfect for camping, grilling, oven dinners, backyard cookouts, or busy weeknights.

Why This Recipe Works

The foil packet acts like a small cooking pouch. It locks in moisture and allows the beef, vegetables, butter, and seasonings to cook together. The potatoes absorb the juices from the hamburger, while the onions add sweetness and flavor. Everything cooks in one packet, so the meal is simple but satisfying.

This dish is also easy to customize. You can add cheese, mushrooms, corn, green beans, bell peppers, or different sauces depending on your taste.

Ingredients

Main Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, thinly sliced
  • 3 carrots, peeled and sliced
  • 1 medium onion, sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon dried parsley or Italian seasoning

Optional Add-Ins

  • Shredded cheddar cheese
  • Green beans
  • Corn
  • Mushrooms
  • Bell peppers
  • Zucchini
  • Cream of mushroom soup
  • Barbecue sauce
  • Ranch seasoning

Step 1: Prepare the Foil

Tear 4 large sheets of heavy-duty aluminum foil. Each sheet should be large enough to hold one serving and fold closed tightly.

If you only have regular foil, use two layers for each packet. This helps prevent tearing and keeps the juices from leaking out.

Lightly grease the center of each foil sheet with oil or cooking spray. This helps prevent the potatoes and beef from sticking.

Step 2: Prepare the Vegetables

Wash and peel the potatoes if desired. Slice them thinly so they cook evenly. Thin slices are important because potatoes take longer to cook than the other ingredients.

Peel and slice the carrots. Slice the onion into thin pieces.

Place the potatoes, carrots, and onions in a large bowl. Add olive oil, salt, pepper, garlic powder, onion powder, paprika, and dried parsley. Toss everything well until the vegetables are evenly coated.

Step 3: Season the Ground Beef

Place the ground beef in a bowl.

Add Worcestershire sauce, a little salt, black pepper, garlic powder, onion powder, and paprika.

Mix gently with your hands or a spoon. Do not overmix, because overworking the beef can make the patties tough.

Divide the beef into 4 equal portions and shape each portion into a flat patty. Make the patties slightly thin so they cook through at the same time as the vegetables.

Step 4: Assemble the Foil Packs

Place a layer of seasoned potatoes in the center of each foil sheet.

Add carrots and onions on top of the potatoes.

Place one hamburger patty over the vegetables.

Add a small piece of butter on top of each patty or over the vegetables. The butter melts during cooking and adds richness to the whole packet.

For extra flavor, you can add a spoonful of barbecue sauce, cream of mushroom soup, or shredded cheese before sealing.
