Homemade Chinese Egg Rolls: A Crispy Traditional Recipe Made Step by Step
Chinese egg rolls are one of the most beloved appetizers around the world, famous for their golden, crispy exterior and flavorful filling packed with fresh vegetables, savory meat, and aromatic seasonings. While many people enjoy ordering egg rolls from restaurants, making them at home allows you to control the ingredients, adjust the flavors, and experience the satisfaction of creating a classic Chinese-inspired dish from scratch.
Although egg rolls are often associated with Chinese-American cuisine, they are inspired by traditional Chinese spring rolls, which have been enjoyed for generations during celebrations and family gatherings. Homemade egg rolls combine simple ingredients with careful preparation techniques to create a snack that is crunchy on the outside, juicy on the inside, and full of delicious flavors.
Ingredients Needed
To make homemade Chinese egg rolls, you will need the following ingredients:
For the Filling:
- 1 pound ground pork (or chicken, shrimp, or a vegetarian alternative)
- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup bean sprouts (optional)
- 3 green onions, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- ½ teaspoon black pepper
- Salt to taste
- 1 tablespoon cooking oil
For Wrapping and Frying:
- 15–20 egg roll wrappers
- 1 small bowl of water or beaten egg (for sealing)
- Vegetable oil for deep frying
Step 1: Prepare the Filling Ingredients
Begin by preparing all the vegetables. Wash the cabbage, carrots, and green onions thoroughly. Slice the cabbage into thin strips and shred the carrots into small pieces. Finely chop the green onions, mince the garlic, and grate the ginger.
Preparing the ingredients before cooking makes the process easier because egg roll filling cooks quickly once it reaches the pan.
Step 2: Cook the Meat Filling
Heat a tablespoon of cooking oil in a large pan or wok over medium-high heat. Add the ground pork and cook until it becomes fully browned, breaking it apart with a spatula as it cooks.
Once the meat is cooked, add the minced garlic and grated ginger. Stir everything together for about 30 seconds until the mixture becomes fragrant.
The combination of garlic and ginger creates the signature aroma commonly found in many Chinese dishes.
Step 3: Add the Vegetables and Seasonings
Add the shredded cabbage, carrots, and bean sprouts to the pan. Stir-fry the mixture for several minutes until the vegetables soften slightly but still maintain some texture.
Add soy sauce, oyster sauce, sesame oil, black pepper, and salt. Mix everything well so the flavors are evenly distributed.
The goal is to create a filling that is flavorful but not too wet. Excess moisture can make the wrappers tear or prevent them from becoming crispy during frying.
