What Is Tapioca Pudding?
Tapioca pudding is made from tapioca pearls—small, starchy spheres derived from cassava root. When cooked, these pearls turn soft and slightly chewy, creating a unique texture suspended in a creamy custard-like base.
Ingredients You’ll Need
- ½ cup small tapioca pearls
- 2 cups milk (whole milk for creaminess)
- ½ cup sugar
- ¼ teaspoon salt
- 2 eggs
- 1 teaspoon vanilla extract

Step-by-Step Method
Step 1: Soak the Tapioca
Start by soaking the tapioca pearls in 1 cup of milk for about 30 minutes. This helps soften them and ensures even cooking later.
Step 2: Heat the Mixture
Transfer the soaked tapioca along with the milk into a saucepan. Add the remaining milk, sugar, and salt. Place the pan over medium heat and stir gently.
Keep stirring frequently to prevent sticking or burning. After a few minutes, you’ll notice the pearls beginning to turn translucent.
Step 3: Prepare the Eggs
In a separate bowl, lightly beat the eggs. To avoid scrambling them, you’ll need to temper the eggs before adding them to the hot mixture.
Step 4: Temper the Eggs
Slowly add a few spoonfuls of the hot tapioca mixture into the beaten eggs while whisking constantly. This gradually raises the temperature of the eggs.
Once warmed, pour the egg mixture back into the saucepan.
