I make strawberry jam only according to this recipe, I don’t look for others – the taste and smell of strawberries are preserved. And without thickener, it’s thick

Step 2: Macerate the Strawberries

  1. Place the strawberries in a large mixing bowl.
  2. Sprinkle the sugar evenly over the strawberries.
  3. Add the fresh lemon juice and mix everything well.
  4. Cover the bowl with a clean cloth or plastic wrap and let it sit for 4 to 6 hours (or overnight in the fridge).

💡 Why? This step allows the sugar to draw out the natural juices from the strawberries, creating a syrup that will help cook the jam evenly.

Step 3: Cook the Jam

  1. Transfer the macerated strawberries and their syrup to a wide, heavy-bottomed pot.
  2. Place the pot on medium heat, stirring occasionally until the sugar fully dissolves.
  3. Once the mixture starts to boil, lower the heat to medium-low and let it simmer gently.
  4. Stir occasionally to prevent sticking and burning.

Step 4: Remove Foam and Continue Cooking

  1. As the jam simmers, a light foam may appear on the surface. Skim this off with a spoon to keep the jam clear.
  2. Continue cooking for 40-50 minutes, stirring occasionally, until the jam thickens.

💡 Tip: To test if the jam is ready, place a small spoonful on a cold plate. If it wrinkles slightly when pushed with your finger, it’s done!

Step 5: Sterilize Jars and Store the Jam

  1. While the jam is cooking, sterilize your glass jars by boiling them in water for 10 minutes.
  2. Once the jam reaches the desired consistency, carefully ladle it into the hot sterilized jars.
  3. Wipe the rims clean, seal the jars with lids, and turn them upside down for 5 minutes to create a vacuum seal.
  4. Let the jars cool completely before storing them in a cool, dark place.
