
Italian Chicken Cacciatore: A Rustic Step-by-Step Recipe
Italian Chicken Cacciatore is a classic comfort dish made with tender chicken slowly cooked in a rich tomato sauce with onions, garlic, bell peppers, herbs, and sometimes mushrooms or olives. The word cacciatore means “hunter-style” in Italian, and the dish is known for its rustic, home-cooked flavor.
This recipe is warm, hearty, and full of deep savory taste. The chicken becomes juicy and tender as it simmers in the sauce, while the vegetables and herbs create a rich Italian-style flavor. It is perfect for family dinners, Sunday meals, or any time you want a comforting dish that tastes like it has been cooked with care.
What Makes Chicken Cacciatore Special?
Chicken Cacciatore is not just chicken in tomato sauce. The flavor comes from building the dish step by step. First, the chicken is browned to create a golden outside. Then the vegetables are cooked in the same pan, picking up all the browned bits from the chicken. Finally, everything simmers together until the sauce becomes thick, rich, and flavorful.
The result is a dish with tender chicken, soft vegetables, and a sauce that tastes deep and homemade.
Ingredients
For the Chicken
- 6 chicken thighs or drumsticks, bone-in and skin-on preferred
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- 2 tablespoons olive oil
For the Sauce
- 1 medium onion, chopped
- 1 red bell pepper, sliced
- 1 green or yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced, optional
- 1 can crushed tomatoes, about 14–15 oz
- 1 can diced tomatoes, about 14–15 oz
- ½ cup chicken broth
- ½ cup dry red wine, optional
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon dried thyme
- ½ teaspoon red pepper flakes, optional
- ½ cup black or green olives, optional
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste
Step 1: Prepare the Chicken
Pat the chicken pieces dry with paper towels. This helps the chicken brown better.
Season both sides with salt, black pepper, Italian seasoning, and paprika. Rub the seasoning gently into the chicken so every piece is well coated.
Bone-in chicken is best for this recipe because it stays juicy during the long cooking time. Chicken thighs are especially good because they become tender without drying out.
Step 2: Brown the Chicken
Heat the olive oil in a large skillet or heavy pot over medium-high heat.
Place the chicken pieces skin-side down in the pan. Let them cook for 4 to 5 minutes without moving them too much. This allows the skin to become golden and flavorful.
Turn the chicken and brown the other side for another 3 to 4 minutes.
The chicken does not need to be fully cooked at this stage. You are only browning it for flavor. Remove the chicken from the pan and set it aside on a plate.
Step 3: Cook the Vegetables
In the same pan, add the chopped onion and sliced bell peppers.
Cook for 4 to 5 minutes until the vegetables begin to soften. Stir often and scrape the bottom of the pan to lift the browned bits left from the chicken.
Add the mushrooms if using, and cook for another 3 minutes until they release some moisture and become tender.
Add the minced garlic and cook for about 30 seconds. Do not let the garlic burn, because it can turn bitter.
