Italian Drunken Noodles: A Bold, Flavor-Packed Pasta Dish

Italian Drunken Noodles is a vibrant, rustic pasta dish that combines the hearty soul of Italian cooking with the rich depth of wine-infused flavors. Despite its playful name, there’s nothing sloppy about this recipe—it’s a beautifully balanced meal where tender noodles soak up a savory, slightly spicy sauce made with juicy sausage, colorful vegetables, and a splash of wine.

This dish is perfect for weeknight dinners when you want something comforting yet exciting, and it comes together in one pan for easy cooking and cleanup.

🍝 Ingredients

For the pasta:

  • 300–400g egg noodles (or pappardelle/tagliatelle)

For the sauce:

  • 2 tablespoons olive oil
  • 300g Italian sausage (mild or spicy, sliced or crumbled)
  • 4 cloves garlic (minced)
  • 1 medium onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 teaspoon chili flakes (adjust to taste)
  • 1 teaspoon Italian seasoning
  • 1/2 cup dry white wine (or red wine for a deeper flavor)
  • 1 can (400g) crushed tomatoes
  • Salt and black pepper to taste
  • Fresh basil (chopped)
  • Grated Parmesan cheese (for serving)

👨‍🍳 Step-by-Step Method

Step 1: Cook the Noodles

Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente.
Drain and set aside, reserving about ½ cup of pasta water.

Step 2: Brown the Sausage

Heat olive oil in a large skillet or pan over medium-high heat.
Add the sausage and cook until browned and slightly crispy on the edges. This step builds a deep, savory base for the dish.
Remove excess grease if needed, but leave a bit for flavor.
