For the Pasta

  • 12 ounces (340 g) pappardelle, fettuccine, or wide pasta noodles

  • 1 pound Italian sausage (mild or spicy), removed from the casing
  • 3 cloves garlic, finely minced
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, sliced into thin strips
  • 1 yellow bell pepper, sliced into thin strips
  • 1 cup cherry tomatoes, halved
  • ½ cup dry white wine (optional, but recommended)
  • 1 can (14 ounces) crushed tomatoes
  • 1 teaspoon red pepper flakes (adjust according to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • Freshly ground black pepper
  • Salt to taste

For Finishing

  • ¼ cup fresh basil leaves, chopped
  • Fresh parsley for garnish
  • ½ cup grated Parmesan cheese
  • A drizzle of extra virgin olive oil

Step-by-Step Method to Make Italian Drunken Noodles

Step 1: Prepare the Pasta

Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it reaches an “al dente” texture, meaning the pasta is tender but still slightly firm when bitten.

Before draining the pasta, reserve about half a cup of pasta water. This starchy water will help the sauce stick better to the noodles and create a smoother texture.

Drain the pasta and set it aside while preparing the sauce.


Step 2: Cook the Italian Sausage

Heat olive oil in a large skillet or deep pan over medium-high heat.

Add the Italian sausage and break it apart using a wooden spoon. Cook until the sausage becomes golden brown and develops crispy edges. This step is important because browning creates deeper flavor through caramelization.

Once cooked, remove the sausage from the pan and set it aside.


Step 3: Sauté the Aromatic Ingredients

Using the same pan, add the sliced onions and cook for 2–3 minutes until they begin to soften.

Add the garlic and stir continuously for about 30 seconds. Be careful not to burn the garlic because it can become bitter.

Step 4: Add the Vegetables

Add the sliced red and yellow peppers to the pan. Cook for approximately 5 minutes until they become slightly tender while keeping some texture.

Add the cherry tomatoes and cook until they begin to soften and release their natural sweetness.
