Italian Sausage & Pepper Egg Noodle Skillet

There’s something wonderfully comforting about a skillet meal that brings together savory sausage, sweet peppers, tender onions, and buttery egg noodles in one pan. This Italian Sausage & Pepper Egg Noodle Skillet takes inspiration from the classic Italian-American combination of sausage and peppers and turns it into a hearty, family-friendly noodle dinner.

The egg noodles soak up the flavorful juices from the sausage, while the peppers and onions add sweetness and a little texture. A touch of garlic, Italian seasoning, and Parmesan brings everything together without making the dish complicated. Best of all, it’s an easy weeknight meal that comes together with minimal cleanup.

  • Works with either mild or hot Italian sausage
  • Egg noodles make the dish hearty and comforting
  • Easy to customize with extra vegetables or cheese

Ingredients

For about 4–6 servings, you’ll need:

  • 1 pound Italian sausage, casings removed
  • 8 ounces wide egg noodles
  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt, plus more as needed
  • ¼ teaspoon black pepper
  • 1 cup chicken broth
  • ½ cup tomato sauce
  • ½ cup shredded mozzarella or Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: ¼ teaspoon crushed red pepper flakes

Step-by-Step Method

1. Prepare the Ingredients

Before turning on the stove, slice the onion and peppers into thin strips and mince the garlic. Remove the sausage from its casings if you’re using links.

Having everything ready makes the cooking process much smoother because the sausage and vegetables cook quickly.

2. Brown the Italian Sausage

Heat a large, deep skillet over medium-high heat. Add the olive oil, followed by the Italian sausage.

Use a wooden spoon or spatula to break the sausage into small, bite-sized pieces as it cooks.

Cook for approximately 5–7 minutes, stirring occasionally, until the sausage is browned and cooked through.

Don’t worry if small browned bits stick to the bottom of the skillet. Those flavorful pieces will become part of the sauce.

Transfer the cooked sausage to a plate, leaving a little of the rendered fat in the skillet.

3. Cook the Peppers and Onion

Add the sliced onion, red bell pepper, and green bell pepper to the same skillet.

Cook over medium heat for about 5–6 minutes, stirring occasionally. The vegetables should begin to soften while still retaining a little bite.

If the skillet looks dry, add another small drizzle of olive oil.

The combination of red and green peppers gives the dish both sweetness and a mild savory flavor, while the onion becomes tender and lightly caramelized.

4. Add the Garlic and Seasonings

Stir in the minced garlic, Italian seasoning, smoked paprika, black pepper, and crushed red pepper flakes if you’re using them.

Cook for about 30–60 seconds, just until the garlic becomes fragrant.

Avoid cooking the garlic for too long, as it can become bitter.

5. Build the Skillet Sauce

Pour the chicken broth and tomato sauce into the skillet.

Use your spatula to scrape the bottom of the pan, loosening those browned sausage bits. This adds considerably more flavor to the sauce.

Bring the mixture to a gentle simmer.
