How to Make Italian Sausage & Pepper Egg Noodle Skillet
Step 1: Cook the Egg Noodles
Bring a large pot of salted water to a boil. Cook the egg noodles according to the package directions until they are just tender.
Try not to overcook them because they will continue cooking when they are added to the skillet.
Before draining, reserve about 1/2 cup of the pasta water. Drain the noodles and set them aside.
Step 2: Brown the Italian Sausage
Place a large, deep skillet over medium-high heat. Add the Italian sausage, removing it from its casing first if necessary.
Break the sausage into small pieces with a wooden spoon as it cooks.
Cook for approximately 6–8 minutes, stirring occasionally, until the sausage is browned and cooked through.
If there is a large amount of excess grease, carefully drain some of it while leaving enough in the pan to flavor the vegetables.
Step 3: Sauté the Peppers and Onion
Add the sliced onion and bell peppers to the skillet with the sausage.
Cook for about 5–7 minutes, stirring occasionally. The vegetables should begin to soften while still maintaining a little texture.
Add the minced garlic, Italian seasoning, smoked paprika, and red pepper flakes if using.
Stir everything together and cook for another 30–60 seconds, just until the garlic becomes fragrant.
Step 4: Build the Creamy Sauce
Reduce the heat to medium.
Pour in the chicken broth and scrape the bottom of the skillet with a wooden spoon. Those browned bits left behind by the sausage contain a lot of flavor and will become part of the sauce.
Add the heavy cream and stir well.
Allow the mixture to simmer gently for approximately 3–4 minutes, giving the sauce time to begin thickening.
