
Key Lime Fudge: A Creamy, Tangy Treat with Bright Citrus Flavor
Key Lime Fudge is a delightful twist on traditional fudge, combining the rich, creamy texture of classic confectionery with the refreshing tartness of lime. Instead of being overwhelmingly sweet, this version has a bright citrus flavor that gives every bite a pleasant balance.
It is an excellent dessert for summer gatherings, holiday treat trays, bake sales, or simply when you want something homemade that looks impressive without requiring complicated baking skills. The best part is that Key Lime Fudge can be prepared with just a handful of ingredients and does not require an oven.
What Makes Key Lime Fudge Special?
Traditional fudge is known for its dense, smooth, melt-in-your-mouth texture. Key lime adds a completely different personality to it. The citrus brings acidity and freshness, helping balance the sweetness of the creamy fudge base.
Authentic Key limes are smaller and more aromatic than regular Persian limes, with a distinctive tart flavor. If Key limes are unavailable, ordinary fresh limes work beautifully and are much easier to find.
For the best result, use freshly grated lime zest and freshly squeezed juice. The zest contains fragrant citrus oils that give the fudge a much stronger lime aroma than juice alone.
Ingredients
For approximately 24–36 small squares, depending on how you cut them, you will need:
- 3 cups white chocolate chips
- 1 can (14 ounces) sweetened condensed milk
- 2 tablespoons unsalted butter
- 2 tablespoons freshly squeezed Key lime juice
- 1 tablespoon finely grated Key lime zest
- ½ teaspoon vanilla extract
- ⅛ teaspoon salt
- Optional: crushed graham crackers for the topping
- Optional: extra finely grated lime zest for decoration
Choosing the Right Ingredients
White chocolate: Since white chocolate forms most of the fudge base, choose a good-quality variety. It should melt smoothly rather than becoming grainy.
Sweetened condensed milk: Make sure you use sweetened condensed milk rather than evaporated milk. They are not interchangeable in this recipe.
Lime juice: Fresh juice provides a brighter flavor than bottled juice. If you can find Key limes, use them; otherwise, regular limes are perfectly suitable.
Lime zest: Zest only the colored outer layer of the peel. Avoid the white pith underneath because it can add bitterness.
How to Make Key Lime Fudge Step by Step
Step 1: Prepare the Pan
Start by lining an 8-inch square baking pan with parchment paper.
Leave some parchment hanging over two opposite sides. These overhanging edges will act as handles later, making it much easier to lift the finished fudge from the pan.
Lightly grease the parchment with a little butter or nonstick cooking spray.
Set the prepared pan aside while you make the fudge.
Step 2: Prepare the Lime
Wash and dry the limes thoroughly.
Using a fine grater or microplane, grate approximately 1 tablespoon of zest. Be careful not to grate too deeply into the white portion of the peel.
Next, cut the limes and squeeze out the juice. Measure 2 tablespoons.
Keeping the zest and juice ready before you begin melting the chocolate makes the process much easier because the fudge comes together quickly.
Step 3: Melt the Butter and White Chocolate
Place the white chocolate chips and butter in a medium saucepan.
Warm them over low heat, stirring frequently.
The goal is to melt the ingredients gently. White chocolate is more delicate than regular chocolate and can become thick or scorched if exposed to excessive heat.
Continue stirring until the mixture is mostly smooth.
Step 4: Add the Sweetened Condensed Milk
Pour the sweetened condensed milk into the saucepan.
Stir continuously until it is completely incorporated with the melted chocolate and butter.
The mixture should become thick, glossy, and creamy.
Keep the heat low throughout this process. You do not want the mixture to boil.
