Ingredients
To make a generous pot of loaded baked potato soup, you will need:
- 6 large russet potatoes, peeled and diced
- 6 slices bacon
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 3 green onions, sliced
- Salt and black pepper, to taste

Step 1: Prepare the Potatoes
Start by peeling the potatoes and cutting them into small cubes. Rinse them under cold water to remove excess starch. This helps keep the soup from becoming overly thick or gummy.
Set the potatoes aside while you prepare the base of the soup.
Step 2: Cook the Bacon
Place the bacon strips in a large soup pot or Dutch oven over medium heat. Cook until the bacon becomes crispy and golden brown. Remove the bacon and place it on a plate lined with paper towels to drain.
