Loaded Cheesy Pocket Tacos are the perfect combination of crunchy, cheesy, and savory goodness wrapped into a convenient handheld meal. Think of them as a cross between a taco, a quesadilla, and a stuffed pastry—sealed pockets filled with seasoned meat, melted cheese, and your favorite toppings. They’re ideal for quick dinners, meal prep, or even party snacks.

For the filling:

  • 500g ground beef (or chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade blend)
  • ½ cup tomato sauce or salsa
  • Salt and pepper to taste

For the pockets:

  • 6–8 small tortillas (flour works best)
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or a mix)

Optional toppings/fillings:

  • Diced bell peppers
  • Corn kernels
  • Black beans
  • Jalapeños
  • Sour cream
  • Fresh cilantro

For cooking:

  • 2–3 tablespoons oil or butter (for frying or brushing)

🔪 Step-by-Step Method

1. Prepare the filling

Start by heating a pan over medium heat. Add a little oil, then sauté the chopped onion for 2–3 minutes until soft. Add the garlic and cook for another minute.

Add the ground meat and cook until browned, breaking it apart with a spoon. Once fully cooked:

  • Stir in taco seasoning
  • Add tomato sauce or salsa
  • Let it simmer for 5–7 minutes

The mixture should be thick and flavorful—not too watery. Set it aside to cool slightly.
