Prepare the mashed potatoes:
Peel and quarter the potatoes, then place them in a large pot. Cover with water and bring to a boil. Cook until the potatoes are tender, about 15–20 minutes. Drain any excess water, then mash the potatoes with milk and butter. Season with salt and pepper, cover, and keep warm. -
Cook the beef gravy:
In a large skillet, brown the ground beef over medium heat, breaking it apart with a spatula. Drain excess fat. -
Add aromatics:
Stir in the diced onion and minced garlic. Sauté for 3–5 minutes until the onions turn soft and translucent. -
Thicken the gravy:
Sprinkle flour over the cooked beef and onions, stirring well to combine. Cook for about 2 minutes. Gradually pour in the beef broth while stirring constantly to prevent lumps. -
Season and simmer:
Add Worcestershire sauce, salt, pepper, and thyme if desired. Let the gravy simmer for 5 minutes, stirring occasionally. For extra veggies, mix in peas and carrots at this stage. -
Serve:
Plate the mashed potatoes and generously spoon the ground beef gravy on top. Garnish with fresh parsley if you like, and serve hot.
