What Makes This Dish Special?

The word “braised” means the chicken is first browned, then cooked gently in liquid until tender. In this recipe, the liquid is a tomato-based sauce flavored with Mediterranean ingredients such as garlic, oregano, basil, paprika, olives, lemon, and olive oil.

Braising gives the chicken a rich flavor and keeps it moist. The tomato sauce absorbs the chicken juices, and the chicken absorbs the herbs and garlic from the sauce. The result is a comforting dish with a bright, savory taste.

Ingredients

For the Chicken

  • 6 chicken thighs or drumsticks, bone-in or boneless
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil

For the Tomato Braise

  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 can crushed tomatoes, about 14–15 oz
  • 1 cup diced tomatoes, fresh or canned
  • ½ cup chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon thyme
  • ½ teaspoon smoked paprika, optional
  • ¼ teaspoon red pepper flakes, optional
  • ½ cup olives, green or Kalamata
  • 1 tablespoon lemon juice
  • 1 teaspoon sugar, optional
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

Step 1: Season the Chicken

Pat the chicken dry with paper towels. This helps the chicken brown better.

Place the chicken in a bowl and season it with salt, black pepper, paprika, and garlic powder. Rub the seasoning over all sides.

Let it rest for 10 to 15 minutes while you prepare the other ingredients. This short resting time helps the seasoning stick and gives the chicken better flavor.

Step 2: Brown the Chicken

Heat olive oil in a large skillet or heavy pot over medium-high heat.

Add the chicken pieces skin-side down if using skin-on chicken. Cook for 4 to 5 minutes on each side until golden brown.

The chicken does not need to be fully cooked at this point. You are only browning the outside to build flavor.

Remove the chicken from the pan and place it on a plate.

Step 3: Cook the Onion and Garlic

In the same pan, reduce the heat to medium.

Add the chopped onion and cook for 3 to 4 minutes until soft and slightly golden. Stir often so it does not burn.

Add the minced garlic and cook for about 30 seconds until fragrant.

This step creates the base of the sauce. The onion adds sweetness, while the garlic adds a strong Mediterranean flavor.
