A perfect cream puff combines two beautiful contrasts: a light, airy pastry shell with a rich and silky filling hidden inside. The magic happens when simple ingredients like butter, flour, eggs, milk, and sugar come together through careful preparation and patience. Although cream puffs may look like something only professional bakers can create, making them at home is surprisingly achievable when each step is followed carefully.

This recipe focuses on the traditional method of preparing choux pastry, the unique dough used to create cream puffs. Unlike most pastries, choux pastry does not use baking powder or yeast to rise. Instead, it relies on steam created during baking, which causes the pastry to puff up and create a hollow center perfect for filling.

Ingredients for Mom’s Famous Cream Puffs

For the Cream Puff Shells:

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 4 large eggs

For the Cream Filling:

  • 2 cups cold heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

  • Powdered sugar for dusting
  • Melted chocolate drizzle
  • Fresh berries

Step-by-Step Method

Step 1: Prepare the Choux Pastry Dough

Begin by preheating the oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper so the cream puffs do not stick while baking.

In a medium saucepan, combine the water, butter, and salt. Heat the mixture over medium heat until the butter melts completely and the liquid begins to boil.

Once the mixture reaches a boil, remove the saucepan from the heat and immediately add all the flour at once. Stir quickly with a wooden spoon until the flour absorbs the liquid and forms a thick dough.

Return the saucepan to low heat and continue stirring for about 1–2 minutes. This step removes excess moisture from the dough and helps create the perfect texture for puffing.

The dough is ready when it becomes smooth and pulls away from the sides of the pan.


Step 2: Add the Eggs Carefully

Transfer the dough into a mixing bowl and allow it to cool for a few minutes. Adding eggs while the dough is too hot can cause them to cook, so this cooling step is important.

Add the eggs one at a time, mixing well after each addition. At first, the dough may look separated, but continue stirring until it becomes smooth and glossy.

The final dough should be thick enough to hold its shape but soft enough to pipe.


Step 3: Shape the Cream Puffs

Place the dough into a piping bag fitted with a round tip. Pipe small circles onto the prepared baking sheet, leaving space between each one because they will expand in the oven.

For evenly sized cream puffs, try making each one approximately 2 inches wide.

If small peaks appear on top after piping, gently smooth them with a damp fingertip. This helps create a more polished final appearance.
