My Aunt Made This for Sunday Supper… and It Completely Stole the Show

There’s always that one dish at a family gathering that quietly outshines everything else. No matter how many sides, salads, or desserts are on the table, that dish is the one everyone goes back for. This recipe is exactly that—the kind of comforting, flavor-packed meal that brings people together and leaves them asking for seconds (and the recipe).

This hearty, creamy baked chicken and potato casserole is simple to prepare, deeply satisfying, and perfect for a cozy Sunday supper.

🛒 Ingredients

  • 4 boneless, skinless chicken breasts (cut into chunks)
  • 4 cups potatoes (peeled and diced small)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup milk
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: ½ cup cooked bacon bits for extra flavor

👩‍🍳 Step-by-Step Method

1. Prep Your Ingredients

Start by preheating your oven to 180°C (350°F). While it heats, peel and dice your potatoes into small cubes—this helps them cook evenly and become perfectly tender.

Cut the chicken breasts into bite-sized pieces and season them lightly with salt, pepper, and paprika.

2. Sauté for Flavor

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent (about 3–4 minutes). Stir in the garlic and cook for another minute until fragrant.

Add the chicken pieces and cook until they are lightly browned on the outside (they don’t need to be fully cooked yet). This step locks in flavor and gives the dish a richer taste.

3. Create the Creamy Sauce

In a large mixing bowl, combine:

  • Cream of chicken soup
  • Sour cream
  • Milk
  • Half of the cheddar and mozzarella cheeses
  • Dried parsley

Mix everything until smooth and creamy. Taste and adjust seasoning with salt and pepper if needed.
